Traveler’s Cake with Figs and Amaranth

A recipe memorized by many, Travelers cake has been brought to you with a special punch in flavours using Choco fills, figs and amaranth. Breathe in the earthy aroma of the flavours as your cake has a special twist. Light up any occasion with this delectable addition.

Dark Fantasy Choco Fills 150 gm

Refined flour 225 gm

Baking powder 4 gm

Baking soda 4 gm

Sugar 180 gm

Milk 180 ml

Dairy cream 140 gm

Melted butter 90 gm

Dried figs, soaked and halved 100 gm

Puffed amaranth 100 gm Vanilla essence 5ml

To prepare

Preheat the oven to 1800C

In a bowl, sieve the flour with baking powder and baking soda. In a separate bowl, combine the sugar with milk and cream and mix well. To make the cake batter, add the melted butter to the milk mixture. Fold the sieved flour in lightly, ensuring there are no lumps in the batter.

To Assemble

Brush the baking tin with butter and flour. Pour 1/3 of the batter into the tin. Add the Dark Fantasy Choco Fills, halved figs and puffed amaranth (reserving two tablespoons to sprinkle) into the batter. Pour the other 1/3 batter of the over this layer. Repeat with halved figs and Dark Fantasy Choco Fills and cake batter to form 2 layers. Sprinkle the top of the batter with the reserved puffed amaranth and bake at 180*c for about 15 to 20 minutes. Cool the cake and serve.
